Factor of psychology affects taste sensitivity

Many factors affect the ability of  a person to detect and identify taste sensations. These may be conveniently divided into four categories – physical, chemical, biological and psychological.

Psychological factors such as preconceived ideas based on appearance or on previous experiences with a similar food, affect a persons perceptions of tastes.

For instance, strawberry flavored foods are expected to be red. However if they are colored green, because of the association of green foods with flavors such as lime, it would be difficult to identify the flavors strawberry unless it was very strong.

Knowledge of the prestige and origin of a wine often affects a person’s opinion of the wine. Comments from tasters, especially those with established reputations, can have profound influence on the views of others.
